Mangoes are delicious and reasonably priced at this time of the year. Use them in this exotic dish which I find is a pleasing alternative to lettuce based salads. There are a few different types of spiralizers on the market nowadays and I own 3 different styles. I generally reach for the simple (and inexpensive) hand-held version that I purchased at Bed, Bath and Beyond, similar to this one on amazon.
Serves 1 as a meal or 2 as a side
1 English cucumber, spiralized
1 small carrot, spiralized, made into ribbons with a peeler, or julienned
4 inches daikon radish, spiralized, made into ribbons with a peeler, or julienned (optional)
1/4 cup thinly sliced red onion
1 ripe mango, sliced (cut off cheeks, slice thinly in the skin and then scoop out with a spoon)
1/2 cup chopped cilantro
1/4 cup chopped cashews
optional vegetables: sliced radishes, sweet peppers
1 teaspoon cold pressed sesame oil
juice of a lime
salt
dash cayenne
1/4 cup basil leaves, sliced (optional)
Put all ingredients in a bowl, toss and enjoy! If you will serving this later, toss everything but the cucumber noodles together, and then lay the noodles on top. Toss just before eating. Enjoy!
